chorizo tacos

it was lunch time today and i felt hungry. i knew there was chorizo in the fridge, but i also knew there was no bread in the house. we had tortillas though, so i figured chorizo tacos would satisfy my sammich craving; i consider a taco to be a sandwich if you disagree i don't care.


i knew i needed some kinda topping, and i had all the ingredients i needed for salsa. this is tomato, jalapeno, garlic, cilantro, salt, and lime juice.

i started the chorizo in a pan with a little oil.

after a few minutes i added onions.

the onions absorb some of the delicious red chorizo fat. this is a great example the positive meaning of greasy, sloppy mess.

i fried the torilla on one side, the on the other.

when the second side started to brown i folded it and finished it on all sides

there you have it, homemade taco shells. i did the later ones better, fried them a little darker.

start with the chorizo and onions.

a good scoop of the salsa.

and finally some cheddar cheese. this was a damn good taco.
