an all time favorite

Last night a made a big batch of chuck beef chili. it was a great batch of chili and in my house there is a responsibility that comes the day after chili making, a responsibility other than taking fiery poops. that responsibility is chili cheese dog making.

the chili is the most important part of the chili cheese dogs, and this is some mean chili.

i heated the hot dogs and chili before hand. i used white bread for the dogs because we didn't have hot dog rolls. i fold the bread around the dogs and arrange them in a greased cast iron skillet.

i always top my dogs with yellow mustard and minced white onion as a flavor contrast to the chili.

i then spoon on a healthy portion of chili. notice how thick and rich the chili is; ground meat chili can't compare


we always keep blocks of cheddar cheese in the fridge, so that is my cheese of choice, already looks good but you ain't seen nothing yet.

i baked them at 350 for about 15 minutes.

the final result is a casserole of spicy, unhealthy, and cheesy goodness.

they may be unhealthy as all hell but goddamn are they tasty. i loves me some chili dogs.

i felt like having a little fun

i was told this morning that i had to fend for myself for dinner, i didn't feel like spending money so i took a look in the freezer. i had a chunk of boneless pork loin and a chorizo sausage. i decided to do something interesting with them.

i proceeded to butterfly the roast, i cut some pieces of trim off in the process. i then ground the meat, sausage, an onion, a few cloves of garlic, spices, and bread crumbs together in the food processor. i spread dijon mustard on the meat layered the sausage mix on top of that and wrapped the meat around the sausage. i rubbed mustard, oil, and spice on the roast and put in the over at 350 for about and hour and a half.

meat turned out good, can't wait to eat it.

i slice the stuffed meat, put on a sesame seed bun, and topped with onions, peppers, and dijon mustard.

i'd say my experiment was a success; that's a damn good sandwich

who knew left-over could be gourmet as shit

what i have for you all today isn't necessarily a sandwich i'd call it a cousin to the sandwich family. i call it a fried butternut squash gnocchi ravioli; a bit long-winded i'll admit but still an accurate depiction.

the gnocchi part of the name comes from the dough of the ravioli. i started with about two cups of day old mashed potatoes, added an egg, a splash of oil, and enough flour to achieve a pie dough like consistency. the filling was about a cup of left-over mashed butternut squash matched with cream cheese.

i rolled the dough out to about an 1/8in thick and filled it with the cream cheese mixture. i then shallow fried them.


like i said, it's not a sandwich but it's not far from a sandwich. most importantly it's fuckdamn delicious
