i was told this morning that i had to fend for myself for dinner, i didn't feel like spending money so i took a look in the freezer. i had a chunk of boneless pork loin and a chorizo sausage. i decided to do something interesting with them.
i proceeded to butterfly the roast, i cut some pieces of trim off in the process. i then ground the meat, sausage, an onion, a few cloves of garlic, spices, and bread crumbs together in the food processor. i spread dijon mustard on the meat layered the sausage mix on top of that and wrapped the meat around the sausage. i rubbed mustard, oil, and spice on the roast and put in the over at 350 for about and hour and a half.
meat turned out good, can't wait to eat it.

i slice the stuffed meat, put on a sesame seed bun, and topped with onions, peppers, and dijon mustard.
i'd say my experiment was a success; that's a damn good sandwich
